
Some of My "Comfort" Recipes
Piggybacking off of my last post, I thought I'd share with you some of my favorite comfort food recipes. Yes, these are mostly desserts. What can I say? I love to bake!
Cheesy Hashbrowns (recipe from my Grandma Hudak)
2 lbs hashbrowns, thaw
Combine: 1 tsp salt 1 can cream of chicken soup (honestly I use cream of mushroom. Most any cream soup is fine) 2 1/2 cups shredded cheddar cheese 1/4 cup butter, melted 1/2 cup onion Pepper 3 cups sour cream
Pour mixture over hash browns and mix thoroughly. Put in a 9 x 13 pan. I typically put some extra shredded cheese on top. Bake at 350 degrees for 1 hour.
Oatmeal Fudge Bars (recipe from my mom) Oatmeal portion: 1 cup butter 2 eggs 2 1/2 cups flour 2 cups brown sugar 2 tsp vanilla 1 tsp baking soda 3 cups rolled oats
Cream butter, eggs, sugar, and vanilla. Add remaining ingredients. Put 2/3 of mixture in a 9 x 13 pan
Fudge filling: 1 package of semi-sweet chocolate chips 1 can sweetened condensed milk 2 Tbsp butter 1/2 tsp salt 2 tsp vanilla Melt in microwave for a few minutes until smooth. Pour over the crust. Add remaining oat mixture on top. Bake at 350 degrees for 25 minutes
Cake Brownies with Cream Cheese Swirl (I stumbled across the brownie recipe and the cream cheese swirl I got from my mom)
Cake brownie:
3/4 cup butter, melted 1 1/4 cup sugar 1/2 cup unsweetened cocoa powder 2 eggs 1 tsp vanilla 1 1/2 cup all purpose flour 1 tsp baking powder 1/4 tsp baking soda 1 cup milk
Mix butter, sugar, and cocoa powder until combined. Add eggs and vanilla. Beat slightly until combined. In a small bowl, combine flour baking powder, and baking soda. Alternately add flour mixture and milk to chocolate mixture, beating after each addition. Pour 2/3 of mixture into a 9 x 13 pan.
Cream cheese swirl: 8 oz cream cheese, softened 1/2 cup sugar 1 egg 1/2 Tbsp vanilla Mix all ingredients together thoroughly. Pour about half of the cream cheese mixture over the brownie batter in the pan. Add the remaining brownie batter and then the remaining cream cheese mixture. Take a butter knife and swirl the brownie batter and cream cheese mixture so it is marbled. Bake at 350 degrees.
There are plenty of other dishes and desserts that I love. But here's just a taste of some for now! Maybe I'll share more another day.
